Happy Saturday to all my fellow foodies!!
For anyone who knows me, you know I love my Mexican food! This recipe was inspired by not only my favorite food but also favorite city. It’s the best of both worlds in my opinion!
Living in NYC I’ve been exposed to some of the best Pizza on the East Coast. Let’s be real here, there is really nothing like digging into a New York Style pizza crust. Its thin, crispy, and melt in your mouth pure deliciousness.
To make things easy let’s just say this Enchilada Pizza is like a cross between a California Pizza Kitchen Tostada Pizza and a Taco Bell Mexican Pizza, over a New York Style thin, crispy crust.
Would you believe me if I told you this only takes 20 minutes to make and really only needs 5 ingredients?
As always, I’m so excited to hear what you guys think! Be sure to tag me at @sweetenedwithspice and #sweetenedwithspice, I’d love to see your creations!
xoxo- Happy Eating!!

ProTips:
- For a healthier option- try a flatbread pizza crust. I’ve made this recipe with that and it still tastes just as good!
- I’m telling you- Taco Bell sauce is the perfect hot sauce for this pizza. If you’re looking for an extra kick. try it out! (If you are like me you probably have a collection of it already.)
- I found with the marinara and enchilada sauce I used, I needed an extra pinch of salt. You may not, depending on what brand you use! Be sure to have a taste of your sauce before adding it!
- To get my sour cream drizzle consistency, I added a couple drops of water to a bowl and mixed it with the sour cream. Make sure to not dilute it too much. You still want it to stay on the thicker side!
- If you don’t have fresh mozzarella, the regular grated package works too. I prefer the fresh because this recipe calls for so little and you can hand tear it into small little bites or keep them in round circles if that’s your style.
- The best thing about this recipe is that it is so customizable! Add some jalapenos if you are looking for some more spice. Want something meatier? Add some seasoned Mexican shredded chicken or pork. Want more flavor? Add some browned crispy garlic or top with scallions. You could even replace the regular sour cream with a chipotle sauce. The options are endless and all up to the likings of the person who will be eating it!
- Lastly, this pizza makes a great party dinner if you want to get your guests to be involved! Start a line for assembly, put out the ingredients and let your guests customize their own Enchilada Pizzas! How fun!
