As a child, my mom would make me a glass of warm cardamom milk, mixed with spices, pistachios, and a small spoon of sugar. “It will help you sleep” she would say. Today, these flavors bring me back in time to my happiest memories as a child. They just work so well together! I guess it goes without even having to say… mothers somehow just know everything don’t they it?
This quick and easy bread is a recipe that is full in flavor and subtle in sweetness. It’s perfect alongside a cup of coffee in the morning or a warm glass of milk before bed. Best of all, it’s topped with this light lemon glaze for a small burst of brightness in your mouth.

ProTips:
- Pistachios + cardamom + lemon = great combination. However, if you’re not a fan of lemon swap it out for some rose water.
- Line your loaf pan with an oversized piece of parchment paper for easy removal. Just tug on the paper and remove cleanly from the pan.
- If you don’t have ground pistachios, can’t make your own, or don’t have the proper blender to make your own, try finding pistachio meal in your local grocery store.
Pistachio and Cardomom Bread
Ingredients
-1 cup of all purpose flour
-1/2 cup of ground unsalted pistachios
– 1 tsp baking powder
-1/4 teaspoon of baking soda
-1 tsp lemon zest
-1/2 cup of granulated sugar
-1 tsp of salt
-3/4 tsp cardamom
-1 tsp vanilla extract
-2 eggs
-1 cup of milk
-6 tbsp of melted butter
For the glaze:
-3/4 cup of powdered sugar
-2 1/2 tbsps of lemon juice
Directions
1. Preheat your oven to 350 degrees and grease your loaf pan.
2. Combine the first 8 ingredients in a bowl.
3. In a separate bowl, whisk together your wet ingredients. (Eggs, milk, butter, vanilla extract)
4. Slowly pour the wet ingredients into the dry ingredients.
5. Stir until well incorporated.
6. Bake in a 1 pound loaf pan for 40 minutes or until a toothpick comes out clean when inserted into the center.
7. Let cool for 15 minutes in the pan and remove onto a wire rack for another 15 minutes of cooling.
8. Prepare the glaze by stirring together powdered sugar and lemon juice.
9. Gently pour on top of the cooled bread and top with crushed pistachios.
