This breakfast Kati Roll is so easy to make and perfect for a quick fix. When I don’t have time in the morning, I try to eat a breakfast that’s going to be easy to have on the go but also keep me going through a packed work day. Having such a busy lifestyle, I knew making something that I could not only just cook in just 10 minutes but also enjoy in transit was going to hit a homerun.
These Kati Rolls are cooked with eggs (omelette style), for a sturdy burrito style wrap, and can even be stuffed with practically any of your favorite veggies or meat.
Since, you can buy almost anything pre-made, and I’ve been trying to keep with a busy lifestyle, I’ve been leaning towards finding a balance. I’ve created this recipe that incorporates healthy pre-made ingredients (which can also be swamped out for homemade) and still provides me with the nutrition I need to start my day.


Pro Tips:
- If you’re looking to buy pre-made parathas or rotis you can find them at almost any Asian grocery store. If there isn’t one around you here is the link to where you can order them online!
- Enjoy these breakfast rolls with your choice of chutney! I topped mine off with some ketchup and Maggie sauce.

Ingredients:
-3 medium eggs
-1 frozen paratha or roti
-1/2 thinly sliced red onion
-1/4 thinly sliced green pepper
-1/4 cup chopped cilantro
-1 lime (juice)
-1 green chili
-1/2 tsp coriander powder
-1/2 tsp red chili powder
-salt to taste
-black pepper to taste
For the green chutney sauce:
-4tbsp green cilantro chutney
-3 tbsp yogurt
Directions:
1. Heat your pan with a small drizzle of oil
2. Lightly saute the green peppers and any other veggies or meat you wish to incorporate
3. Set aside
4. In the same pan, cook your frozen (or fresh) paratha or roti by the instructions on the package
5. In a small bowl, mix the onions with the lime juice and set aside to rest while you prepare the rest of the ingredients
6. Set aside.
7. Whisk together the eggs with the spices, salt, pepper, and half of the cilantro
8. Pour the eggs into the pan omelette style and let cook for 1 minute
9. While still wet and runny, place the paratha or roti on top of the egg layer in the pan
10. Let cook for another 2 minutes
11. Flip the egg and paratha onto the flip side (the egg should still be slightly runny so it coats the back side of the paratha)
12. Let cook for another 3 minutes until the egg is fully cooked
13. On a plate, assemble the kati roll by placing the veggies, onions, and remaining cilantro in the middle of the paratha that is now covered in cooked eggs
14. Roll it up burrito style
15. Cut in half and wrap separately to enjoy on the go!
