Yesterday’s brunch was literally a whole damn mood!
I woke up craving cinnamon rolls but wanted to try and make them without all the effort. And let me tell you, these hit the spot perfectly. They taste so similar to Cinnabon it’s insane. The sugar caramelizes just a tad, giving the pancakes a slightly crisp exterior and a fluffy inside. Just like a real cinnamon roll.
Full transparency- I am being pretty pantry conscious these days and didn’t have all the ingredients I would’ve typically used..so here’s the kicker… I used a boxed pancake mix. But hey, ain’t no shame in that when they taste so good and take little to no time to put together 🤷🏽♀️
What do you need to make your own cinnamon roll pancakes? Butter, brown sugar, cinnamon, pancake mix, cream cheese, vanilla extract, powdered sugar, and milk.
Cinnamon Roll Pancakes
Ingredients:
-Pancake mix
Filling:
-2 tablespoons unsalted butter
-4 tablespoons of brown sugar
-1 1/2 tsp of ground cinnamon
-ziplock bag
Icing:
-1 tbsp butter
-1/8 cup cream cheese
-1/4 tsp of vanilla extract
-2/4 cup powdered sugar
-1 tsp of milk
Directions:
Cinnamon filling:
1. Melt butter
2. Combine with 4 brown sugar
3. Add ground cinnamon
4. Mix and pour into a ziplock bag.
Icing:
1. Combine butter with cream cheese and powdered sugar
2. Add vanilla extract + milk (add more to thin out if needed) and mix.
Assemble:
1. Make ur favorite pancake recipe
2. Spread some butter lightly on a flat pan
3. Using a measuring cup, pour some pancake batter onto the pan.
4. Cut a small hole in the corner of your Ziploc bag filled with cinnamon filling .
5. Once the pancake starts to bubble, use the Ziploc bag as a piping bag and create a swirl- starting from the center out.
6. Cook for 2 more minutes so that the flip side is golden.
7. Flip the pancake carefully and FAST. (so the filling doesn’t spill)
8. Let the other side cook for another 3 minutes and plate.
9. Pour the icing over when hot and enjoy!
Protip:
You can sub the sugar and spices for anything you have on hand. I’ve used dark brown sugar and pumpkin spice before and it was just as good. If you don’t have an ingredient, just leave it out or substitute it for something similar. #stayhome
