Who says healthy food needs to be bland food? On days where I’m looking for immune-boosting recipes, this dish never fails to hit the spot. Not only does this recipe pack a powerful antioxidant punch, but it’s SO easy and incredibly flavorful.
For those who don’t know what this is, Palak paneer is a popular Indian dish that is made up of blended spinach mixed with paneer and infused with spices.
This recipe is what I grew up eating, tried and tested by yours truly (by that I mean by generations of my family members) and I’m so excited to share it with all of you!
Palak Paneer
Ingredients:
-3 cups of spinach
-1 cup of cilantro
-1 (8 oz) packet of fresh paneer
-1 tsp sour cream (or greek yogurt for a healthier option)
-1 chopped tomato
-1 inch of ginger
-2-3 cloves chopped garlic
– 1-2 green chilies
-1 tsp cumin seeds
-1 chopped onion
-1 tsp of garam masala
-1/4 tsp of turmeric
-Salt to taste
-Lemon juice to taste
– Red chili powder to taste
-a pinch of sugar.
Directions:
1. Start by blanching spinach and cilantro in salted water. Make sure you, transfer to an ice water bath after a quick 2 minutes.
2. Set aside and grab some oil. Sauté whole cumin seeds, with onion, and green chilies.
3. Once onions are translucent, add in garlic and tomato. Cook until soft.
4. Add this mixture to a blender with ginger and the blanched spinach and cilantro.
5. Blend until smooth.
6. In a sauce pan, fry turmeric powder in a tablespoon of oil.
7. After about a minute, transfer the blended spinach mixture into that pan.
8. Add garam masala and a pinch of sugar
9. Add red chili powder, salt and lemon juice -all “to taste”
10. Mix. Cover and cook for 3 minutes.
11. Add in cubed paneer and cook covered for another 5 minutes.
12. Lastly, mix in cream & serve!
