“Fried” Ice Cream

Here’s a super fun and easy treat, great for any occasion- even the kids can help! This tasty dessert is usually deep fried but this easier version eliminates the messiness, and leaves you with that same delicious, crunchy result. I used to love making these in the kitchen with my momma. They’re buttery, sweet, and go oh so well with fresh strawberries. ⁠


Ingredients:

-Quart of vanilla ice cream
-2 1/2 cups frosted corn flakes cereal, coarsely crushed
-1 tablespoon butter, melted
-2 tbsp sugar

Directions:

1. Preheat oven to 350 degrees F.

2. Line a baking sheet with wax paper or saran wrap.

3. With a spoon or an ice cream scoop, form ice cream balls. Place on baking sheet then place in freezer for about 1 hour.

4. Meanwhile, coat another baking sheet with cooking spray. Combine coarsely ground corn flakes, sugar, and melted butter. Bake 5 minutes, or until lightly browned and crisp.

5. Once crisp, remove to a shallow dish and allow to cool completely.

6. Remove ice cream balls from freezer and roll in cereal mixture, coating on all sides.

7. Place on baking sheet and freeze 2 to 3 hours, or until ice cream is firm.

8. Top with fresh fruit, or chocolate sauce.
