Hello lovelies!! I’m sharing a super simple recipe with you all today. This Papad Salad Bowl with Green Chutney Vinaigrette is a real crowd pleaser, not only does it look incredible, but it tastes even better!
This recipe was inspired by your traditional taco bowl- but of course, I had to spice it up a bit. If you like a good tangy salad- this is definitely the one for you!
Those of you who aren’t familiar with what Papad is- its this super thin wafer-like Indian snack, typically made from lentil, chickpea, black gram, or rice flour. The dough can either be plain or seasoned with chilli, cumin, garlic, and/or black pepper. Typically They are shaped into a thin round flat wafer, dried (traditionally in the sun) and then cooked by either roasting, toasting, or sometimes deep fried. (YUM!)

Papad Salad with Green Chutney Vinaigrette
Ingredients
-2 cups lettuce or mixed greens of your choice
-1/4 cup cherry tomatos or roma tomatoes, chopped
-1/4 cup cooked chickpeas
-1 small handful of cilantro,chopped
-1 lime
-1 tablespon green chutney (coriander chutney) of your choice
-2 tablespoons olive oil
-Salt to taste
-Pepper to taste
-Red Chilli Poweder to taste
Directions
Mix together all ingredients for the salad and set aside.
Vinaigrette
1. In a small bowl add the green chutney and lime
2. Whisk in the olive oil until you form one homogonous dressing like mixture
3. Season with salt and pepper to taste
Papad Bowl
1. Dampen the papad to lightly with water
2. Wait 2 minutes for the water to seep into the papad. It will be plyable when ready
3. Place in a microwave safe bowl and gently press the papad into shape
4. Microwave on high for 30 seconds to 1 minute.
To assemble the salad
1. Gently toss the prepared salad with the vinagrette and spoon the mixture into the papad bowl
2. Top with a light sprinkle of red chilli powder
